You probably remember the first time you tried it. Chunks of fresh fish, salt, lemon, maybe some type chili or spice, perhaps a dash of olive oil-all common, familiar ingredients thrown together to create a special kind of magic and a singular dish: ceviche.
Pre-dating the arrival of the Spanish to Peru’s shores by millennia and originally prepared in-boat and eaten off of paddles, ceviche’s popularity is well established throughout Latin America and, especially within the last decade, across the globe. Originating with the Moche civilization and later named after the similar Moorish dish sevish, ceviche was once considered the food of peasants yet more recently has been elevated to haute cuisine status by celebrity chef Gastón Acurio and given delectable variations by Peru’s Chinese, Japanese and Italian immigrants, each giving it their own unique, delicious twist. From of the thousands of mom & pop cevechitos throughout Peru to high-end restaurants in France, Ceviche’s DNA is a delectable, delightful, mouth-watering trip through the history, identity and meaning of Peru’s most class-transcendent and timeless national dish.
Building on Peru’s buzz as a modern culinary hot spot, director D'orlando Arriagada makes a warm, enthusiastic guide across his country’s landscape, talking with archaeologists, writers, historians and of course, cooks, to better understand ceviche’s lasting appeal and its rise as the cornerstone dish of Peru’s culinary renaissance.
